Next week I will travel from Leipzig to Frankfurt to catch my flight home, but how early should I start ? Please tell me if trains in Germany do get late/cancelled due to heavy snowfall or not.
Do advice.

1. Trains can ever get late (cancellations are very uncommon) due to snow/ice/weather in general - even in Germany ;-)
2. Trains can also have delays, but mostly on local connections. On long distance connections (like Leipzig-Frankfurt) they can easily make up leeway because they have more time during the stops. On your route you may have to change trains 1 or 2 times I suppose but it will be fast IC or ICE (InterCity-Express) and if one should be late, the connecting train will wait a certain time for delayed feeder trains.
3. I don%26#39;t know how early you have to start - it depends on the schedule (look at www.bahn.de). It will probably last min. 4-5 hours.

My problem is that I have to catch a plane from Frankfurt airport which will not wit for me. I checked Bahn.de, there is one train which arrves 3 hours before my plane leaves, is that enough, or a train can even get 3 hours late?

Usually trains are not effected by snowfall, of course there can be difficult situations like trees falling on the lines which cause problems with eletric trains... If something like this happens, there will be a replacement service by bus, but this can take some time. But this happens maybe once in 20 years on one rail line.
The usual delay which happens to, let%26#39;s say 5-10 % of the trains are not more than 10 mins... connecting services usually wait, especially if there%26#39;s no other possibility for longer time.
As I can see, there are direct ICE-trains between Leipzig and Frankfurt Airport... you should not have any problems. If a train is extremly late (let%26#39;s say more than an hour), catch a taxi (I know this will be VERY expensive) and send the taxi receipt to Deutsche Bahn, you might get a refund.
Maybe catch an earlier train if heavy snowfall is expected for the next day but arriving 3 hours prior to flight departure should be enough.

I don´t think a train would have 3 hours or even 2 hours delay... 30-40 min can happen. But the trains are far less affected by snow than roads. If the snowfall is so heavy that the trains get late then the roads will be blocked and a taxi, however expensive, won´t get you anywhere. But then again the plane won´t start on time too. The air traffic is usually at least as badly affected by snow as roads are.
All in all the train is probably the transortation mode least affected by snowfalls.
